High Protein Creamy Mac & Cheese

7 oz. whole wheat penne pasta 

1 medium yellow onion, finely chopped 

3 cloves garlic, finely chopped or grated 

½ cup fat-free milk 

½ cup cold water 

1 heaped tsp vegetable bouillon 

4 heaped tsp mustard powder 

2 scoops Gold Standard 100% Casein Creamy Vanilla 

3 ½ oz. reduced fat cheddar cheese, grated 

Salt & freshly ground black pepper, to taste 

Fresh parsley leaves to garnish 

Directions

  1. Cook the pasta as per pack instructions. 
  2. Put 3 tablespoons of boiling water into a large pot and add the chopped onion and a large pinch of salt.  Sauté the onion over a medium heat for 4-5 minutes stirring frequently and adding more boiling water if necessary. 
  3. Add the garlic and cook for another minute.  
  4. Add the milk, cold water, bouillon and English mustard powder. Season with a pinch more salt and a good grinding of black pepper. 
  5. Bring the boil and simmer for 5-6 minutes. 
  6. Mix in the Gold Standard 100% Casein and grated cheese and stir well until the cheese melts. 
  7. Drain the pasta and add to the sauce and stir to mix. 
  8. Serve with fresh parsley leaves scattered over the top.
