High Protein French Toast

Berry Compote:

1 ½ cup frozen summer berries

2 tbsp golden caster sugar

2 tablespoons water

½ scoop Gold Standard 100% Whey Protein vanilla ice-cream

French Toast:

2 large eggs

5 fl oz low fat milk

1 teaspoon vanilla extract

1 scoop vanilla ice-cream whey protein powder

4 thick slices of white bread

Low cal spray to fry

Directions

  1. For the compote place the summer berries, caster sugar, water and Gold Standard 100% Whey Protein powder in a small pot. Bring to the boil, stirring continuously until well combined. Simmer for 2-3 minutes until the compote has thickened.
  2. For the French toast whisk together the eggs, milk, vanilla extract and Gold Standard 100% Whey Protein powder until smooth.
  3. Pour into a wide shallow bowl and add the bread. Allow the bread to soak up the egg mix for a minute and then flip over and repeat with the other side until the bread is well coated.
  4. Spray some oil into a large frying pan. Turn on the heat to a high heat. Add in the soaked bread. (Cook in batches.) Fry for a few minutes on each side until nice and golden. Remove from the pan and cut into triangles and serve with the berry compote.
