Protein-Packed Chicken Sandwiches
Directions
- Place the chicken breasts into a small pot of boiling water.
- Bring to the boil and then reduce to a simmer for 15-20 minutes until the chicken is cooked through and then drain.
- Once cooled shred the chicken with two forks (or beat with a hand-mixer) and place in a bowl.
- Add in the grated carrot, mayonnaise, curry powder and the Gold Standard 100% Whey Protein powder with a little pinch of salt.
- Give everything a really good mix.
- Spread on the multi-grain bread and top with spinach leaves before sandwiching with the second slice of bread.
