High Protein Vanilla Blueberry Muffins

2 1/3 cups all-purpose flour

1 tablespoon baking powder

½ teaspoon baking soda

3 scoops of Gold Standard 100% Whey Protein Vanilla Ice Cream

2 teaspoons vanilla extract

2 large eggs

5 fl oz extra virgin olive oil

3.5 fl oz 0% Greek yogurt

1/3 cup skim milk

1 1/3 cups blueberries

Directions

  1. Pre-heat the oven 375°/350° for convection ovens.
  2. In a large bowl mix together the all-purpose flour, baking powder, baking soda and the Gold Standard 100% Whey Protein powder.
  3. In another bowl mix together the vanilla extract, eggs, extra virgin olive oil, Greek yogurt and the skim milk.
  4. Add the wet ingredients to the dry ingredients and stir until just combined.
  5. Fold in the blueberries. Pro tip: Lightly roll your blueberries in flour before adding to muffin mix to prevent blueberries from sinking to bottom of muffin.
  6. Spoon the batter into a standard 12-mold muffin lined muffin tray.
  7. Bake for 20 minutes until risen and golden. Test with a skewer inserted into the center and ensure it comes out clean.
  8. Cool on a wire rack and then store in an airtight container.
