Protein Banana Bread

3 ripe medium bananas 

1 medium egg 

1 ½ cups dry oats, ground to a powder 

3 scoops Gold Standard 100% Whey Protein Vanilla Ice Cream 

1 teaspoon baking soda 

1 teaspoon baking powder 

1 teaspoon ground cinnamon 

 

Topping: 

150g 0% fat Greek yogurt 

50g (approx. 2 scoops) Gold Standard 100% Whey Protein Vanilla Ice Cream 

½ banana sliced 

Directions

  1. Pre-heat the oven to 375°.
  2. Line a 2 lb loaf tin with baking parchment paper. 
  3. Mash the bananas in a mixing bowl. Add the egg, ground oats, Gold Standard 100% Whey Protein powder, bread soda, baking powder and cinnamon and mix really well. 
  4. Pour into the prepared tin. 
  5. Bake in the pre-heated oven for 25 minutes. 
  6. Remove and allow to cool. 
  7. Meanwhile make the topping by mixing the Greek yogurt and Gold Standard 100% Whey Protein powder together in a bowl. Once the cake has cooled remove from the tin and spread this mixture all over the top. Slice half a banana and scatter over the topping. 
  8. Slice and serve.
