Chewy Protein Cookies

  • 60g Optimum Nutrition Gold Standard Whey
  • 65g plain flour
  • Pinch salt
  • 1/2 tsp baking soda
  • 1 tsp ground cinnamon
  • 150g rolled oats
  • 115g butter
  • 100g brown sugar
  • 50g castor sugar
  • 1 egg
  • 1 tsp vanilla
  • 150g raisins

Directions

1.      Mix protein powder, flour, and other dry ingredients. Set aside.

2.      In stand mixer (with a paddle attachment), beat butter, brown sugar, castor sugar until combined. Add egg and vanilla.

3.      Add dry ingredients, mix until combined then add raisins.

4.      Cover dough and refrigerate for a min of 30 mins.

5.      Preheat oven to 180°C. Line a baking tray with baking paper.

6.      Once dough has chilled, roll 1 tbsp balls of dough. Place onto tray and then press down. Need to leave room in between.

7.      Bake for 10 to 12 minutes or until the edges of the cookies are lightly golden brown and the tops are set. Remove from the oven and cool on the baking sheets for 5 minutes, then transfer the cookies to a wire rack cool completely.
